static route

I think this would do it:

route add -net 192.168.100.0/24 linuxbox.local

Substitute the IP range within your VPN for the address range, and the
name/IP of your linux box.  The command won't survive a reboot; you'd
have to stick it in /usr/local/etc or something, somewhere.
